It's important to note that I read what must be altered versions of the original stories. The two stories I read are titled How the Son of Gobhaun Saor Sold the Sheepskin and How the Son of Gobhaun Saor Shortened the Road. They can be found online here and here.

Each story follows a similar pattern beginning with the Gobhaun Saor setting his son a challenge. For example, in the first story he directs him to sell a sheepskin, but return with both the money and the skin. Each story had some interesting moments (I liked how some of the riddles were solved for example), but it seems that I missed out on by not reading the original stories because while I found some of the riddles clever I wasn't really captivated by the stories.
